Ingredients
- 1 pkg firm tofu
- 1/4 C peanut butter
- 2 tbsp hoisin sauce
- 2 tbsp rice vinegar
- 1/4 tsp hot pepper sauce
- 1 tbsp vegetable oil
- 2 green onions, chopped
- 2 cloves garlic, minced
- 3 C chopped broccoli
- 1 red pepper, sliced
- 1 C bean sprouts
- 1/4 C chopped coriander
- 1/4 C chopped peanuts

Preparation
Step 1
Pat tofu dry with paper towel. Cut into 1-inch cubes. Set aside.
Step 2
In small bowl, whisk together 1/4 water, peanut butter, hoisin sauce, vinegar and hot pepper sauce. Set sauce aside.
Step 3
In large skillet, heat oil over med-high heat. Stir-fry tofu, green onions and garlic until tofu is golden, about 3 minutes.
Step 4
Add broccoli and red pepper. Stir-fry for 1 min. Add 2 tbsp water. Cover and steam until broccoli is tender-crisp, about 1 minute. Add peanut sauce. Cook, stirring, to heat through. Sprinkle with bean sprouts, coriander and peanuts.
Serve with rice vermicelli.
