Crispy Breaded Tofu Strips & Sweet Potato Fries

Ingredients
- 1 pkg extra-firm tofu
- 1/2 C soy milk
- 1 tbsp cornstarch
- 1/3 C cornmeal
- 1/2 C breadcrumbs
- 1/2 tsp cinnamon
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 1/4 tsp onion powder
- 1 large sweet potato
- 1 tsp oil
- 1/2 tsp cinnamon
- 1/4 tsp cumin

Preparation
Step 1
Dry and press tofu with dish towel to soak out the water.
Step 2
Whisk together milk and cornstarch in a shallow dish. In another bowl, mix together cornmeal, breadcrumbs, salt and spices. Set aside. Preheat oven to 400 degrees and grease baking sheet with oil.
Step 3
Slice potato into fries and then coat with oil, spices and salt. Lay on greased baking sheet.
Step 4
Slice tofu into 8-9 strips. With one hand, dip the tofu strip into the milk mixture then into breadcrumb mixture. Coat all sides of tofu then place on baking sheet. Repeat with the rest of the strips.
Step 5
Bake on middle rack for 20 minutes then flip both tofu and fries and bake another 15-20 minutes until crispy.
Step 6
Remove and serve with barbecue sauce.
