Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1/2 tsp salt
  • 3/4 cup canola oil
  • 2 tbsp plain yogurt
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1 1/2 cups carrots, finely grated
  • 1/4 cup raisins
  • 1 1/2 cups icing sugar
  • 3 tbsp milk
  • 2 tsp unsalted butter, melted

Preparation

Step 1

Preheat oven to 375°. Line muffin cups with paper liners. In a medium bowl, whisk together the first 7 ingredients.

Step 2

In a large bowl, beat together oil, yogurt, and sugar. Add eggs, and beat well. Stir in 1 tsp vanilla. Mix in flour, a little bit at a time. Stir in carrots and raisins.

Step 3

Fill muffin cups and bake for 20-25 minutes. Cool completely.

Step 4

For the icing, measure icing sugar into a bowl. In a separate bowl, mix together milk, butter, and 1/2 tsp vanilla. Pour mixture into icing sugar, and mix until smooth.
