Ingredients

  • ½ cup butter (at room temperature)
  • 1 cup sugar (set aside 2-3 Tbsp. to macerate berries)
  • 2 large eggs
  • 1 tsp vanilla
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 cups all purpose flour
  • ½ cup milk
  • 1 ½ cups diced strawberries (sprinkle the 2-3 Tbsp. of sugar and set aside for 30-60Min)

Preparation

Step 1

Preheat oven to 375.

Step 2

With mixer beat butter, sugar, eggs and vanilla.

Step 3

In a separate bowl blend flour, salt and baking powder. Mix in bits: dry/wet/dry/wet/dry (in that particular order).

Step 4

Fold in strawberries and their juices. Pour batter into muffin tins. Bake 375 for 25-30 minutes. Cool completely.

Can substitue blueberries or other fruit of your desire.
