Ingredients
- 3/4 cup unsalted butter
- 1 cup sugar
- 1 egg & 1 egg white, divided
- 1/3 cup milk
- 1 tsp almond extract
- 1 tsp vanilla
- 1/2 tsp salt
- 2 1/2 flour
- 1 pkg almonds, ground
- 1/2 tsp red food coloring
- 1/2 tsp green food coloring

Preparation
Step 1
Cream together butter and sugar until creamy, then beat in whole egg. Beat in milk, almond extract, vanilla, and salt. Gradually add flour and almonds, mixing until soft dough forms.
Step 2
Divide dough into 3 equal portions. Leave one plain, tint one red, and tint one green. Mix food coloring in well. Cover each dough and chill about 45 minutes, or until firm and no longer sticky.
Step 3
Roll each dough into 7x9" 1/8" thick rectangles on parchment paper. Chill dough on baking sheets until firm.
Step 4
Beat egg white. Place red dough on surface and brush with egg white. Lining up the edges, invert plain dough onto red one and peel off parchment paper. Brush with egg white and do the same thing with the green dough.
Step 5
Roll the dough into a tight log, smoothing and straightening as you roll. Press edge of log together to seal. Wrap in plastic wrap and chill until firm, about 2 hours.
Step 6
Preheat oven to 350°. Slice log into 1/4" rounds. Bake 12-14, until firm but not browned.
