  • 2 eggs
  • 2/3 cup milk
  • 1/2 cup flour
  • 1 tbsp butter, melted
  • 1 tsp sugar
  • 1 tsp vanilla

Preparation

Step 1

Heat an 8" frying pan over medium-high heat.

Step 2

Whisk eggs. Whisk in milk, flour, butter, sugar, and vanilla until no lumps.

Step 3

Pour 1/2 cup batter into the center of the frying pan. Lift pan from burner and quickly tilt to thinly cover the bottom. Return pan to burner and cook until top is set and the edges start to turn golden, about 30 seconds. Continue cooking another 30 seconds. Repeat with rest of batter.

Step 4

For a twist, put jam in the middle, or fresh fruit.
