Ingredients
- 1/2 cup ketchup
- 2 tbsp packed brown sugar
- 1 tbsp reduced sodium soy sauce
- 2 tbsp canola oil
- 1 tsp chili powder
- 1/4 tsp allspice
- 1/4 tsp black pepper
- 4 boneless, center-cut loin pork chops (4 ounces each), trimmed
- 3 large potatoes, cut into 1/2" cubes
- 3 large onions, thinly sliced
- 1 large stalk celery, thinly sliced
- 2 large carrots, thinly sliced

Preparation
Step 1
Preheat oven to 425*.
Step 2
Lay four 12" x 18" pieces of aluminum foil or parchment paper on the work surface. Lightly coat with non-stick spray.
Step 3
Combine, in large bowl, ketchup, brown sugar, soy sauce, oil, chili powder, allspice, and pepper. Add the pork, potatoes, onions, celery and carrots and toss until coated.
Step 4
Place 1 pork chop in each piece of foil or paper and distribute the vegetables evenly between them as well as the sauce.
Step 5
Fold the foil together neatly and snugly to enclose securely.
Step 6
Lay the packets, seam side up, on a baking sheet. Bake for 30 to 35 minutes, or until the pork and vegetables are tender when pierced with a fork. Be careful of escaping steam from package when opening.
