Ingredients
- 3 tbsp fresh lime juice
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tbsp tomato paste
- 1 1/2 tbsp maple syrup
- 1 1/4 tsp dried thyme
- 1 tsp ground allspice
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp black pepper
- 1 tbsp grated ginger root
- 2 large garlic cloves, grated
- 1/8 tsp chili flakes
- 2 1/2 C cooked chickpeas (1 can)
- 1 C chopped red pepper
- 3/4 C chopped green onions
- 2 tbsp fresh cilantro, chopped
- 2 avocados

Preparation
Step 1
Preheat oven to 375 degrees
Step 2
In baking dish, combine all ingredients except chickpeas, red pepper, green onion and cilantro. Stir until well mixed. Add chickpeas, red peppers and green onion and stir again.
Step 3
Cover dish with foil and bake 25 minutes. Remove foil, bake uncovered 8 minutes.
Step 4
Serve with rice. Top with cilantro with sliced avocado on the side.
