Fresh Greek Pasta Salad 1 Picture


  • 1/4 cup olive oil
  • 1 1/2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 garlic clove, chopped
  • 1 1/2 cups penne, cooked and drained
  • 1 cup feta cheese, crumbled
  • 1 cup tomato, diced
  • 1 cup cucumber, diced
  • 1/2 cup black olives, pitted and sliced
  • 1/2 cup green bell pepper, sliced
  • 1/2 cup red onion, chopped
  • 2 tbsp chopped fresh parsley
  • Salt and pepper, to taste

Step 1

In blender container, place oil, lemon juice, oregano and garlic. Cover and blend at high speed until mixture is creamy.

Step 2

In large salad bowl, combine pasta,feta cheese, tomato, cucumber, olives, green pepper, red onion and parsley. Pour in creamy dressing and toss well. Add salt and pepper to taste.

Step 3

Chill at least 1 hour to blend flavours.

Chill overnight for maximum flavour.
