Rhubarb Nut Bread

Ingredients
- 1 1/2 cup brown sugar, packed
- 2/3 c. oil
- 1 egg
- 1 c sour milk1
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. vanilla extract
- 2 1/2 cup flour
- 1 1/2 cups diced fresh rhubarb
- 1/2 cup chopped nuts (optional)
- Then add topping below:
- In bowl combine sugar, oil and egg beat.
- In another bowl combine sour milk, salt, baking soda, and vanilla.
- Add milk mixture to sugar mixture alternately with flour, beating well after each addition. Fold in rhubarb and nuts. Turn into well greased and floured loaf pan 8x4x3 " Sprinkle on topping:
- Topping: combine 1/2 cup granulated sugar and 1 Tbsp. melted butter or 1/3 cup brown sugar and 1 tbsp. melted butter.
- Bake 325 degrees oven for 40 to 45 Min. Being careful not to over bake.
