Chocolate Crinkle Cookies

- 2 cups sugar
- 3/4 cup oil
- 1 cup unsweetened cocoa
- 4 eggs
- 2 tsp vanilla extract
- 2 1/3 cup flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- Powdered sugar for rolling

Step 1
1. Combine sugar, oil and cocoa in a large bowl. Beat until well blended.
2. Beat in eggs and vanilla.
3. In a small bowl, combine flour, baking powder and salt. Slowly add to cocoa mixture, beating well.
4. Cover and refrigerate dough until it is firm enough to handle. If you are wanting them to firm up faster, like me, stick the covered dough in the freezer until firm enough to handle.
5. Preheat oven to 350 degrees F and grease a cookie sheet.
6. Roll dough into 1-inch balls then roll them in powdered sugar. Place on cookie sheet about 2 inches apart from each other.
7. Bake at 350 degrees F for 10-12 minutes.
Add a teaspoon of instant espresso powder for a coffee-flavoured twist!
