Ingredients

  • esiree potatoes, peeled and cut into 2cm pieces
  • * 3 chorizo sausages
  • * 7 eggs
  • * 2 tbs. Gourmet Garden Parsley ( or handful fresh parsley chopped)

Preparation

Step 1

Part cook potatoes in microwave for 4–6 minutes.

Heat a non-stick fry pan with a heat resistant handle then add chorizo and cook for 3 minutes or until golden, remove. Using the juices from the sausage add potatoes and cook for 8–10 minutes or until they start to crisp. Reduce heat to medium/low and return chorizo to pan.

Beat eggs and parsley and season. Pour over potato mixture and give a little shake. Over a low heat, cook for 10 minutes before removing to place under the grill for 5 minutes or until firm and golden.

Cut into wedges and serve
