Ingredients

  • 2 tsp olive oil
  • ½ cup vertically sliced onion
  • 2 garlic clove, minced
  • 1 pound asparagus, trimmed and cut in pieces (can use canned if not in season and add to muffin tins without sauteing)
  • Cooking spray
  • 1¼ cups milk
  • 1 cup shredded Gruyere cheese
  • 3 tbsp chopped fresh parsley
  • 2 tsp Dijon mustard
  • ½ tsp sea salt
  • ¼ tsp pepper
  • 5 large eggs, lightly beaten
  • 3 tbsp grated fresh Parmesan cheese
  • ¼ cup minced green onion

Preparation

Step 1

Preheat oven to 350*.

Step 2

Spray a standard 12 cups muffins pan with cooking spray.

Step 3

Heat oil in a large nonstick skillet over medium-high heat. Add onion and garlic,saute 1 minute. Add asparagus, saute another 2-3. Portion out the mixture into the muffins tin.

Step 4

Combine milk,cheese, parsley, dijon mustard, salt, pepper, and eggs in a large bowl.

Step 5

Pour milk mixture over asparagus mixture and sprinkle with parmesan and green onions.

Step 6

Bake at 350* for about 20-25 minutes or until a knife inserted in center comes out clean.

Step 7

Let stand 5 minutes before serving.
