Chocolate Caramel Thumbprints

Ingredients
- 1 egg
- 1 cup flour
- 1/3 cup cocoa
- 1/4 tsp salt
- 1/2 cup soft butter
- 2 T milk
- 1 tsp vanilla
- 16 caramels
- 3 T unwhipped whipping cream
- 1 1/4 cup pecans
- 1/2 cup semisweet chocolate chips
- 1 tsp shortening/butter

Preparation
Step 1
Separate egg yolk and white. Chill egg white.
Step 2
Mix flour, cocoa and salt in a bowl.
Step 3
Beat butter for 30 seconds, then cream butter with sugar.
Step 4
Beat in egg yolk, milk and vanilla. Slowly beat in flour mixture.
Step 5
Cover and chill two hours.
Step 6
Melt caramels, then cream until smooth.
Step 7
Lightly beat egg whites. Shape dough into 1" balls.
Step 8
Roll balls in egg white, then in pecans. Use thumb to dent the center of each ball.
Step 9
Bake in oven for 10 minutes at 350 degrees.
Step 10
Remove from oven and fill dent with caramel mixture. Combine chocolate pieces and shortening. Drizzle chjocolate over cookies.
