Ingredients
- 2 1/2 C rolled oats
- 1 C coconut
- 1/2 C chopped almonds
- 1/2 C chopped dried cranberries
- 1/2 C semi-sweet chocolate chips
- 1/3 C whole-wheat flour
- 1/4 C ground flax seed
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3/4 C mashed banana
- 1/2 C liquid honey (or maple syrup)
- 1/4 C melted butter
- 1 tsp vanilla

Preparation
Step 1
Preheat oven to 350 degrees. Line a 9x13" baking pan with parchment paper, letting the paper overhang on tow opposite sides (so you can use it to pick up the granola bars after baking).
Step 2
Combine first 9 ingredients in a large bowl. Mix well. In a medium bowl, whisk together banana, honey, butter and vanilla. Pour wet ingredients over dry ingredients. Mix using a wooden spoon until dry ingredients are covered with wet ingredients.
Step 3
Pour wet granola mixture into the prepared pan and spread it evenly to the edges. Using your hands, press down firmly on the mixture so that it's tightly packed in the pan.
Step 4
Bake for about 25 minutes, until top turns a light golden brown and feels dry to touch. Remove pan from oven and cool completely on a wire rack. Lift cooled slab of granola from pan by holding onto the parchment paper and transfer to a cutting board. Using a large, sharp knife, cut the granola into 16 bars. Wrap bars tightly in plastic wrap and store in an airtight container. These bars freeze well.
Step 5
Tip: You can replace the coconut or other nuts with other ingredients as long as the quantity remains the same. Other possible ingredients are hemp hearts, pumpkin seeds, gogi berries, chia seeds, walnuts, etc.
