Preparation
Step 1
Crust
In a large bowl, combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight. Roll the dough between 2 pieces of waxed paper to prevent sticking and for easy transfer. Place into pie plate.
Step 2
Preheat oven to 350 degrees F. Melt the butter in a saucepan in medium heat. Stir in flour to form a paste. Add water, vanilla, white sugar and brown sugar, and bring to a boil. Add in cinnamon and allspice, then put in the sliced apples. Reduce temperature, let it simmer til the apples are coated and sauce thickens.
Step 3
Take out the crust form the fridge and brushed bottom with egg whites to keep from getting soggy. Fill with apple filling, leaving a few tablespoons of sauce. Cover with a lattice work crust. Brush the leftover sauce over the crust.
Step 4
Bake for 45 to 55 minutes, or until apples are soft.
