Ingredients
- 1 1/4 cup flour
- 1 cup cornmeal
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1 egg lightly beaten
- 1/2 cup cottage cheese
- 2 tablespoons honey
- 2 tablespoons butter melted (optional)
- 1 cup whole kernel corn (thaw first if using frozen)

Preparation
Step 1
In large bowl, combine flour, cornmeal, baking powder and soda, salt. Mix well.
Step 2
in medium bowl, combine buttermilk, egg, honey, butter and corn. Beat with a whisk until well blended.
Step 3
Add corn mix to flour mix and stir. Pour batter into a 8x8" baking pan that has been sprayed with non-stick spray. (or rub with butter and put flour over.) Bake for 35 minutes or until wooden pick inserted in center comes out clean. Cut into 9" squares and serve warm.
