Ingredients
- 1 cup chopped fresh pineapple
- 2 cups pineapple juice
- Rum extract
- 1 16 ounces can cream of coconut
- 1 quart vanilla ice cream
- 2 cups crushed ice, divided
Preparation
Step 1
Combine first 4 ingredients, stirring well.
Step 2
Combine 1 1/4 cup pineapple mixture, 1 cup ice cream and 1/2 cup ice in container of an electric blender. Puree until smooth.
Step 3
Repeat process 3 limits with remaining ingredients- yield 8 cups
