Ingredients

  • 3c all purpose flour divided
  • 4tsp ground ginger
  • 1tbsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp salt
  • 1/2tsp baking soda
  • 3/4c unsalted butter melted
  • 3/4c lightly packed brown sugar
  • 1 egg
  • 1/2 c fancy molasses

Preparation

Step 1

Stir 2 cups of flour with rest of dry ingredients except brown sugar. Make a well in the centre.

Step 2

Beat butter with brown sugar in a bowl using an electric mixer set to medium for two minutes. Beat in egg and molasses. Pour mixture into flour mixture.

Step 3

Stir until combined. Stir in rest of flour 1/4 cup at a time, until dough is no longer sticky but is still soft. Divide in four parts. Form into disks wrap in plastic wrap.

Step 4

Refrigerate until chilled at least 30 min or upto one week. Or freeze for upto a month

Let sit for five minutes before rolling out
