Ingredients

  • 2 tbsp butter or margarine
  • 1 onion chopped
  • 1 tbsp flour
  • 1/2 tsp salt and pepper
  • 2 cups milk
  • 2 cups shredded cheese
  • 6 medium potatoes peeled and thinly sliced (6 cups)
  • 1/4 cup dry bread crumbs

Preparation

Step 1

In frying pan over medium heat melt butter. Cook onion about 2 minutes. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly then remove from heat

Step 2

Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute then remove from heat. Stir in 1 1/2 cups shredded cheese until melted.

Step 3

Spread potatoes in casserole dish. Pour cheese sauce over potatoes. Bake uncovered for 1 hour

Step 4

Mix remaining 1/2 cup shredded cheese and bread crumbs. Sprinkle over potatoes. Bake uncovered for 15-20 minutes until top is brown and bubbly and potatoes are tender.
