Bacon Cheeseburger Soup

Ingredients
- 1 Lb Ground Beef
- 1 Lb Bacon - cooked, crumbled
- 3/4 Cup Onion - chopped
- 3/4 Cup Carrots - shredded
- 3/4 Cup Celery - diced
- 1 Tsp Basil
- 1 Tsp Parsley
- 4 Tbsp Butter - divided
- 3 Cups Chicken Stock
- 4 Cups Potatoes - peeled, diced
- 1/4 Cup Flour
- 2 Cups Shredded Cheese
- 1 Cup Milk
- 1/2 Cup Heavy Cream
- Salt & Pepper to taste
- 1/4 Cup Sour Cream

Preparation
Step 1
In a large pot brown the ground beef. Drain fat and set beef aside in a bowl.
Step 2
In same pot, add 1 tbsp butter and melt. Add in onion, carrots, parsley, basil and celery. Saute until tender.
Step 3
Add in the chicken stock, potatoes and beef and bring to a boil. Reduce heat, cover and simmer for 10-15 minutes or until potatoes are tender.
Step 4
In a small skillet melt remaining butter. Add flour, cook and stir until mixed for about 3-5 minutes until bubbly. Add to soup and bring to a boil. Cook for 2 minutes then reduce heat to LOW.
Step 5
Stir in cheese, milk, cream, salt and pepper. Cook and stir until cheese melts. Stir in bacon. Remove from heat and stir in sour cream.
