Ingredients
- 1/2 Lb Pasta
- 1 Tbsp Oil
- 1 Lb Ground Beef
- 1 Onion - diced
- 2 Cloves Garlic - minced
- 2 Tsp Oregano
- Salt & Pepper to taste
- 1 Tsp Basil
- 4 Cups Chicken Stock
- 1 Can Diced Tomatoes
- 2 Tbsp Tomato Paste
- 1/2 Cup Cottage/Ricotta Cheese
- 1/2 Cup Parmesan Cheese - fresh, grated
- 2 1.2 Cups Shredded Cheese

Preparation
Step 1
In a large pot heat oil on MED heat and brown beef. Remove beef from pot, drain fat and set aside.
Step 2
Add onion to pot and saute until translucent. Add the garlic and stir for a minute or two.
Step 3
Stir in chicken stock, diced tomatoes, uncooked pasta, tomato paste, oregano, basil and salt and pepper. Pasta will cook as soup simmers.
Step 4
Bring to a boil then reduce heat to MED-LOW. Stir in the beef and simmer for about 30 minutes.
Step 5
Spread cheese over top and broil until melted and bubbly.
