Ingredients

  • 1 cup Sugar
  • 2 T Flour
  • 3 Egg Yolks
  • Juice and Rind of 1 Lemon
  • 1 cup Milk
  • 1 T melted Butter
  • 3 Beaten Egg Whites
  • Pie Crust:
  • 2 cups Flour
  • 1 t Salt
  • 2/3-3/4 cup Shortening
  • 1/2 cup Ice Water

Preparation

Step 1

Mix sugar and flour. Add egg yolks, lemon juice and rinds, and milk gradually. Add melted butter. Fold in egg whites. Pour into unbaked pie crust. Bake at 350 degrees for 45 min.

Step 2

Make pie crust. Sift flour and then add rest of ingredients. Work shortening in by using a fork. Form into a ball and then roll out into a circle. Place into pie pan.

Step 3

Pour into unbaked pie crust. Bake at 350 degrees for 45 min.
