- 1 1/2 cups rolled oats
- 1 cup + 2 tablespoons all-purpose flour
- 2 tablespoons ground coffee
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 3/4 cup unsalted butter (melted)
- 3/4 cup packed brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 egg yolk
- 2 teaspoon vanilla extract
- 1 cup semisweet chocolate chips

Step 1
Preheat the oven to 325 degrees F. Grease cookie sheets.
Step 2
Combine together the oats, flour, coffee, baking soda and salt; set aside.
Step 3
In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the dry ingredients until just blended. Stir in the chocolate chips.
Step 4
Chill dough for at least 30 minutes.
Step 5
Drop cookie dough a teaspoonful at a time onto the prepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
