Ingredients
- 2 cups AP flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp salt
- 1 cup brown sugar
- 1/4 cup sugar
- 2/3 cups coconut milk
- 1/3 cup vegan margarine
- 2 tsp red wine vinegar
- 1 tbsp vanilla extract
- Powdered sugar
- Lemon juice
- Vegan margarine
Preparation
Step 1
Combine dry ingredients. Combine wet ingredients. Stir wet ingredients into dry ingredients until just combined.
Step 2
Preheat oven 325*F. Pour batter into greased cupcake pan. Bake 20-30 minutes until no longer doughy.
Step 3
Ice cupcakes when cooled.
