Ingredients
- 2 bunches of asparagus
- 2 Tbsp extra virgin olive oil
- 2 Tbsp Parmesan cheese
- 1 tsp lemon juice
- Salt and pepper to taste

Preparation
Step 1
Rinse the asparagus. Break off the tough white bottoms and discard. Cut into 1 to 2 inch pieces, slicing the asparagus at a diagonal.
Step 2
Fill a medium saucepan half way with water and bring to a boil. Add the asparagus and reduce heat to a simmer. Parboil them for 2 minutes. Drain. While the asparagus are still hot, toss in bowl with olive oil, Parmesan, and lemon juice. Add salt and pepper. Serve warm or at room temp.
