Ingredients
- 2 t olive oil
- 1 garlic clove, minced
- 1 can (14.5 oz) stewed tomatoes in juice
- 1/2 cup short tubular pasta
- 5 oz frozen cauliflower (half a 10-oz pkg)
- 1 medium zucchini, quartered lengthwise and chopped
- 1/4 tsp dried thyme
- salt & pepper
Preparation
Step 1
In medium saucepan, heat oil over medium. Add garlic and cook 1m. Add tomatoes with juice and 2 c water; bring to a boil. Add pasta and boil 5m; stir in cauliflower, zucchini and thyme. Season with salt & pepper. Reduce heat; simmer 5m or until veggies are tender.
