Ingredients

  • 4 Cups Oil
  • 1 Egg
  • 1 1/2 Boneless, skinless Chicken (cut into 1/2" cubes)
  • 1 tsp Salt
  • 1 tsp White Sugar
  • 1 pinch White Pepper
  • 1 Cup Cornstarch
  • 2 Tbsp Vegetable Oil
  • 3 Tbsp Green Onion
  • 1 Clove Garlic (minced)
  • 6 Dried, whole red chili peppers
  • 1 Strip Orange Zest
  • 1/2 Cup White Sugar
  • 1/4 tsp Ground Ginger
  • 3 Tbsp Chicken Broth
  • 1 Tbsp Rice Vinegar
  • 1/4 Cup Soy Sauce
  • 2 tsp Sesame Oil
  • 2 Tbsp Peanut Oil
  • 2 tsp Cornstarch
  • 1/4 Cup Water

Preparation

Step 1

Heat oil in deep fryer or large pan 375F (190C)

Step 2

Beat egg in mixing bowl. Add chicken cubes. Sprinkle with salt, 1 tsp sugar, and white pepper, mix well. Slowly mix in 1 cup cornstarch until cubes are coated.

Step 3

Drop chicken into oil one by one (until they float). Remove chicken and cool. Refry chicken until golden brown (approx 2 min). Drain on paper towel lined plate.

Step 4

Heat 2 Tbsp oil in wok or skillet over high heat. Stir in green onion, garlic, whole chili peppers, and orange zest. Cook and stir 1 min (until garlic is golden). Add 1/2 cup sugar, ginger, chicken broth, vinegar, soy sauce, sesame oil, peanut oil. Bring to boil. Cook for 3 min.

Step 5

Dissolve 2 tsp cornstarch into water, stir into boiling sauce. Return to boil, cook until sauce thickens and is no longer cloudy. Stir in chicken. Reduce heat to low and cook for a few minutes until chicken absorbs some sauce.
