Cheesy Scallop Cakes

Ingredients

  • 1/2 lb chopped scallops
  • 3 chopped green onions
  • 1/2 cups shredded cheddar
  • 1/4 cup flour
  • 2 eggs beaten separately
  • 3/4 cup flour
  • 1/2 cup dry bread crumbs
  • Salt and pepper
  • Olive oil for frying

Preparation

Step 1

Combine, scallops, green onions and cheese.
Sprinkle with flour and add 1 beaten egg. Season with salt and pepper. Refrigerate about 10 minutes.
Shape scallop mixture into 8 cakes.
Coat each with flour, dip in beaten egg, then breadcrumbs.
Heat oil in frying pan and cook cakes about 2 minutes each side until golden
