Ingredients

  • 2 1/2 lbs Potatoes
  • 2/3 cup Flour
  • 4 cups Milk
  • 2 cups buttermilk
  • 6 slices of bacon fried crisp and crumbled (1 tbs of bacon fat reserved)
  • 1 cup reduced fat cheddar cheese
  • 1/2 teaspoon of salt and pepper
  • 1/4 teaspoon each onion powder and garlic powder
  • 1 cup sour cream (I used light)
  • 3/4 cup sliced green onion

Preparation

Step 1

1.Bake potatoes until soft (microwave or oven)

2.Scoop out the center (I save the skins to make baked potato skins) and slightly mash (depending how chunky you like your soup)

3.Mix flour with 2 cups of the cold milk

4.In a saucepan, add the milk/flour mixture, remaining milk, buttermilk on medium heat stirring until thick (about 7-9 minutes)

5.Add potatoes, reserved bacon fat, salt, pepper, garlic & onion powder. Stir in sour cream and 1/2 cup of the green onions

6.Cook on low for 10 minutes or until heated through
Top with Cheddar, green onions, crumbled bacon and extra sour cream if desired
