Ingredients

  • 3 tablespoons vegetable oil
  • 1/2 cup popcorn kernels
  • 1 ½ teaspoons baking soda
  • 1 tsp cinnamon
  • 1 tsp chili powder
  • ½ tsp cayenne pepper
  • ½ a vanilla bean (seeds)
  • 1 cup brown sugar
  • 1 ½ cup maple syrup
  • 3 tablespoons unsalted butter
  • 1 1/2 tablespoons kosher salt.
  • 1 cup toasted pecans (chopped)

Preparation

Step 1

Heat oil on medium and add popcorn kernels. Shake pot vigorously while the corn is popping. Once popcorn has popped, remove from heat and place the popped corn in a bowl.

Step 2

In a pan, heat butter, sugar, and maple syrup on high until it caramelizes. Watch carefully, caramel can burn easily! Once the mixture has caramelized, remove from heat and add baking soda (it will bubble up a bit, don’t worry this is normal).

Step 3

Pour caramel onto popcorn. Add spices, salt and pecans and toss, like you would a salad.
Place mixture onto baking sheets and let dry.
