Ingredients
- Seeds from 1 pomegranate
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon-style mustard
- 1 teaspoon sugar
- 1/4 cup olive oil
- 1 head Romaine or 2 heads lettuce, torn into bite-size pieces
- 2 ounces cheese or Parmesan cheese, shaved
- 1/2 cup honey-roasted peanuts, roughly chopped

Step 1
In a bowl combine half of the pomegranate seeds, red wine vinegar, Dijon mustard, and sugar. Stir together and mash the seeds to release their juice. Whisk in olive oil until combined; set aside. Place lettuce in a large serving bowl. Top with remaining pomegranate seeds, cheese, and the peanuts. Toss the salad with half of the dressing. Pass remaining dressing.
