  • Seeds from 1 pomegranate

  • 1/4 cup olive oil
  • 1 head Romaine or 2 heads lettuce, torn into bite-size pieces
  • 2 ounces cheese or Parmesan cheese, shaved
  • 1/2 cup honey-roasted peanuts, roughly chopped

Preparation

Step 1

In a bowl combine half of the pomegranate seeds, red wine vinegar, Dijon mustard, and sugar. Stir together and mash the seeds to release their juice. Whisk in olive oil until combined; set aside. Place lettuce in a large serving bowl. Top with remaining pomegranate seeds, cheese, and the peanuts. Toss the salad with half of the dressing. Pass remaining dressing.
