Ingredients

  • 1 1/5 lb. sausage and chicken
  • 3 tablespoons bacon drippings
  • 3 tablespoons flour
  • 2 medium onions chopped
  • 2 tablespoons parsley chopped
  • 2 cups raw rice
  • 3/4 teaspoon red pepper
  • 1 bunch green onions, chopped
  • 2 cloves garlic, minced
  • 2 1/2 cups water
  • 2 teaspoons salt

Preparation

Step 1

Brown meat in oil, drain and remove meat from pan.

Step 2

Add bacon grease, heat then add flour. Brown flour to a dark roux.

Step 3

Add onion, parsley, and garlic. Cook until onions soften.

Step 4

Brown rice in roux then add the water.

Step 5

Add salt, pepper, and meat. When it comes to a boil, lower heat to lowest point and cook for about an hour, covered tightly. - Check occasionally for water level.
