Ingredients
- For the broth:
- 5-6 pounds beef soup bones
- 2 onions chopped
- 2-4 inch piece ginger
- 1 daikon radish sliced
- 5 star anise
- 2 whole cloves
- 1 t black peppercorns
- 3 inch cinnamon stick
- 1 T sugar
- 1 T salt
- 2 T fish sauce
- 1 pound beef thinly sliced
- 1 pk softened rice noodles
- Garnish:
- sirracha hot chili sauce
- hoisin sauce
- cilantro
- bean sprouts
- Thai basil
- green onions
- lime

Preparation
Step 1
Put beef bones in large stock pot with 2 gallons of water. Season with salt. Bring to boil and cook 2 hours.
Step 2
Skim fat and add radish and onions. Put ginger, cinnamon, peppercorns, cloves, and anise pods into spice bag and add to broth. Stir in sugar, salt and fish sauce. Simmer for 4 more hours.
Step 3
Strain broth and discard spices and bones and veggies.
Step 4
Keep broth at simmer.
Step 5
Add to bowl some of the meat and noodles. Ladle hot broth over to cook the meat and soften the noodles.
Step 6
Add sauces and garnish to taste.
