Ingredients

  • 2 cups all purpose flour
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 vegetable oil
  • 3 large eggs
  • 1 tsp. vanilla
  • 1 15 oz can pumpkin
  • 1 cup sugar

Preparation

Step 1

Heat oven to 325 degrees.

Step 2

Sift flour, cinnamon, baking soda, baking powder, and salt together.

Step 3

In a separate bowl, mix the sugar, vegetable oil, eggs, and vanilla.

Step 4

Combine both mixtures and fold into the pumpkin.

Step 5

Once the ingredients are all incorporated, pour into a 9X5X3 loaf pan coated with butter and flour.

Step 6

Bake 1 hour 15 minutes. A knife inserted should come out clean.

Step 7

Cool for 15 minutes on a cooling rack before turning out.

Step 8

Cool completely.

For muffins, bake 30 minutes.
