Ingredients

  • for the brown sugar bacon
  • 1/2 lb. bacon (roughly 10 strips)
  • 1/4 cup light brown sugar
  • Preheat oven to 375 degrees. Arrange the bacon slices in a large baking dish, or rimmed baking sheet. Sprinkle the sugar over the bacon. Bake for 15 – 20 minutes, until the bacon has nice color and is caramelized. Set the bacon onto a cutting board to cool, and once cool, slice into tiny bits.

Preparation

Step 1

2 cups all-purpose flour
1 cup whole wheat pastry flour
1/4 cup light brown sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
4 eggs
2 cups milk
1/2 cup yogurt
2/3 cup canola oil, or, if you like living on the edge, bacon drippings

Preheat waffle iron to medium heat.

In a large mixing bowl, combine the flours, sugar, baking powder, baking soda, and salt. In a smaller mixing bowl, lightly whisk the eggs, and then whisk in the milk, yogurt, and oil. Pour the wet ingredients into the dry, mixing just until combined. Fold in to bacon bits.

Pour 1/4 cup per waffle on to the waffle iron. Keep cooked waffles warm on a platter in a 200 degree oven.

Serve with a little bit of butter and plenty of maple syrup.
