Ingredients

  • 1 C diced cooked bacon
  • 1 C chopped celery
  • 3 T flour
  • 1 t salt
  • 1/2 t pepper
  • 2/3 C sugar
  • 2/3 C cider vinegar
  • 1 1/2 C water
  • 1/3 C fresh parsley
  • 2 t celery seed
  • 2 quarts boiled peeled sliced red potatoes 1/8" thick

Preparation

Step 1

Sautee onion and celery 3 min.

Step 2

Stir in flour, salt, and pepper and cook 2 min more.

Step 3

Add sugar, vinegar, and water, whisk and bring to boil for 1 min.

Step 4

Add parsley, celery seed, and bacon. Stir and remove from heat.

Step 5

Put potatoes into greased 9 x 13 casserole dish and pour dressing over potatoes. Stir gently so don't break up potato slices.

Step 6

Bake 375 degrees for 45 minutes until bubbly.

Step 7

Cool and serve at room temperature.
