Ingredients

  • Topping:
  • 4 TSP butter, cut into pieces
  • 3/4 c light brown sugar
  • pineapples
  • Batter:
  • 1 1/2 c flour
  • 2 tsp baking powder
  • salt
  • 1/2 c unsalted butter-room temp
  • 1 c sugar
  • 1 tsp vanilla
  • 2 large eggs, separated
  • 1/2 c milk
  • 1/4 tsp cr of tartar

Preparation

Step 1

Melt butter and sugar together until it bubbles slightly. Pour into greased cast iron pan and arrange pineapples. Whisk flour, baking powder and salt. In another bowl, beat sugar and butter until fluffy. Add vanilla and yolks, beating well. Add milk and flour mixture alternately. Whisk whites with tartar until peaks form. Fold in. Bake at 350 for 40 minutes. Cool for 10 minutes then run a knife around edge and flip.
