Ingredients
- 3 C. - Flour
- 1 tsp. - Salt
- 1 tsp. - Baking soda
- 2 tsp. - Cinnamon
- 1/4 tsp. - Baking powder
- 3 - eggs
- 2 C. - Sugar
- 1 C. - Oil
- 2 C. - grated, peeled zucchini
- 1 tsp. - vanilla
- 3/4 C. - Chopped walnuts (optional)
Preparation
Step 1
Preheat oven to 325 degrees.
Step 2
Sift together flour, salt, baking soda, cinnamon and baking powder. Stir until well combined.
Step 3
Beat eggs and sugar together until light and foamy. Add oil, grated zucchini and vanilla, mix lightly. Add to flour mixture and stir until blended. Add chopped nuts (optional).
Step 4
Pour batter into 2 loaf pans (lightly oiled)
Step 5
Bake for 1 hour. and remove from oven. Allow 10 minutes of cooling time before removing from pan.
