Zucchini bread

Ingredients

  • 3 C. - Flour
  • 1 tsp. - Salt
  • 1 tsp. - Baking soda
  • 2 tsp. - Cinnamon
  • 1/4 tsp. - Baking powder
  • 3 - eggs
  • 2 C. - Sugar
  • 1 C. - Oil
  • 2 C. - grated, peeled zucchini
  • 1 tsp. - vanilla
  • 3/4 C. - Chopped walnuts (optional)

Preparation

Step 1

Preheat oven to 325 degrees.

Step 2

Sift together flour, salt, baking soda, cinnamon and baking powder. Stir until well combined.

Step 3

Beat eggs and sugar together until light and foamy. Add oil, grated zucchini and vanilla, mix lightly. Add to flour mixture and stir until blended. Add chopped nuts (optional).

Step 4

Pour batter into 2 loaf pans (lightly oiled)

Step 5

Bake for 1 hour. and remove from oven. Allow 10 minutes of cooling time before removing from pan.
