- 1 T butter
- 1 T oil
- 1/2 t salt
- 1/4 t pepper

Preparation
Step 1
Saute onion and carrot in butter and oil until crisp-tender. Use slotted spoon to transfer to paper towels to drain.
Step 2
Add potatoes to skillet, adding more oil if necessary. Fry until golden and tender, more if desired doneness is crispy.
Step 3
Return onion and carrot mixture to the potatoes and heat through.
Step 4
Season with salt and pepper.
