Ingredients

  • 4 Green Bell Peppers - Tops Removed and Seeded
  • 1 lb. Ground Turkey
  • 2 Tbsp. Olive Oil
  • 1/2 Onion - Chopped
  • 1 cup Mushrooms - Sliced
  • 1 Zucchini - Chopped
  • 1/2 Red Bell Pepper - Chopped
  • 1/2 Yellow Bell Pepper - Chopped
  • 1 cup Packed Fresh Spinach
  • 14.5 oz. Diced Tomatoes - Drained
  • 1 Tbsp. Tomato Paste
  • Italian Seasoning - To Taste
  • Garlic Powder - To Taste
  • Salt & Pepper - To Taste

Preparation

Step 1

Preheat oven to 350.

Step 2

Individually wrap the green bell peppers in foil, place in baking dish. Bake 15-25 minutes.

Step 3

In a skillet over medium heat, cook turkey until evenly brown - set aside. Drain fat. Heat the oil in the skillet and cook onion, mushrooms, zucchini, peppers and spinach until tender. Return the turkey to the skillet. Mix in tomatoes and tomato paste and season to taste. Stuff the green peppers.

Step 4

Return to oven and cook 15 minutes.
