Pork Cutlets Parmigiana

Ingredients

  • 1/2 cup Flour
  • 2 Eggs
  • 1 cup Panko
  • 1/4 cup Grated Parmesan Cheese
  • 1 lb. Pork Tenderloin
  • Salt
  • 1/2 cup Marinara Sauce
  • 1/2 cup Shredded Mozzarella

Preparation

Step 1

Preheat oven to 425. Line a rimmed baking sheet with foil. Place a wire rack on top and mist with cooking spray. Place flour in a shallow bowl, eggs in a separate bowl, beaten, and combine panko and parmesan in a third bowl.

Step 2

Cut tenderloin into 8 pieces and place between plastic wrap/parchment paper and pound to 1/4-inch thickness. Sprinkle with salt then dip in flour, egg, and panko mixture.

Step 3

Place cutlets on rack and bake 15-20 minutes. Remove from oven, spread 1 Tbsp. marinara sauce and sprinkle with cheese. Broil 2-3 minutes. Serve immediately.
