  • 1 and 1/2 cups warm water

  • 1 tbsp olive oil (or any blend of oil, preferably Mediterranean)

Preparation

Step 1

- In a large bowl put yeast, and sugar together and add the warm water (not boiling) at 110 F/45 C.
-Let the mixture stand for 10 minutes until the yeast floats on top and is foamy.( Approx 10 mins)
-Pour in the olive oil, salt, and mix lightly, add the flour and Italian l seasoning (one tsp - optional) and mix with a spatula till the dough starts to come together.Knead with had if needed. Remove the dough from the bowl and lightly brush the bowl with some olive oil/pam spray.Now form the dough into a tight ball and with your fist make a depression in the ball and place it into the bowl. Now put a plastic wrap over the bowl, or place a tea towel and keep the bowl in a warm place.I keep the bowl in the oven with the light of the oven on for at least 1 hour.The dough should have doubled in size after 1 hour.
-After one hour take out the dough and split it into two equal sized balls.This would make two thin crust pizza or one thick crust pizza.
-Keep the dough balls in two separate bowls which has been brushed with oil.Rotate the dough in the bowl on all sides so it is covered with oil.Now again tightly cover the bowl with plastic wrap or tea towel and let it rest for 45 mins.
-Take out one of the dough balls and place it on the pizza pan which has been brushed with oil and sprinkled with cornflour (helps to make crust crispy).Stretch the dough with hand or roll out with a rolling pin on a flat surface brushed with oil till it is large enough for the pizza pan. Place the stretched out dough on the pan, sprinle some salt to taste, and place a ladle of pizza/pasta red sauce(Ragu or the like).Sprinkle approx 1 tbsp oregano and a handful of cheese (2% Fat cheese).Place it in a preheated oven at 500 F and let it cook for 5 mins.
-Take out the pizza pan from the oven and let it rest for 2-3 minutes.Now add your favorite toppings and place into a preheated oven at 425 F for 12-14 minutes.(I added cheese spinach, and freshly cut thin sliced tomatoes).Take it out as you see that the cheese has melted and top and the sides have started to brown.
-I keep the other pizza dough also cooked till step number 5 and then freeze the same covered with a aluminium foil in the freezer to enjoy later in the week.When I am ready to use it i take it out of the freezer and put in my favorite toppings and place t in oven for remaining 14 minutes.
