Ingredients
- 1 tsp. baking powder
- 2 1/3 cup all purpose flour
- 1/3 cup powdered sugar
- 1 1/2 tsp baking soda
- 1 cup milk
- 1 cup sour cream
- 2 eggs
- 2 tbsp butter, melted
- 2 tbsp. lemon juice
- 1 tbsp. freshly grated lemon peel
- 1 can blueberry pie filling (or make your own sauce)
- Optional: whipped cream or cool whip

Preparation
Step 1
Combine flour, powdered sugar, baking soda, and baking powder in a large bowl.
Step 2
Combine all remaining (6 ingredients) in a small bowl. Mix well.
Step 3
Stir into flour mixture until mixed.
Step 4
Heat lightly greased griddle or frying pan to 350 degrees or until drops of water sizzle.
Step 5
For each pancake, spoon 1/4 cup batter onto the hot griddle and spread to form 4 inch circle.
Step 6
Cook until bubbles form on top. (1-2 minutes)
Step 7
Turn pancakes; continue cooking until lightly browned. Keep warm.
Step 8
Repeat with remaining batter.
Step 9
Top with blueberry pie filling and whipped cream.
