Ingredients

  • 2 lb pork tenderloin
  • 1 T vegetable oil
  • 1/2 T Liquid Smoke
  • 1/2 t pepper
  • BBQ sauce:
  • 1.5 c ketchup
  • 1/3 c brown sugar
  • 2 T cider vinegar
  • 2 T Liquid Smoke
  • 1 T hot sauce

Preparation

Step 1

Trim all fat and silver skin. Brush pork with oil and sprinkle with black pepper and Liquid Smoke. Place in stoneware jelly roll pan, covering with silicone jelly roll pan. Cook in microwave on HIGH 10-13 minutes or until 160F degrees. Shred using 2 forks.

Step 2

BBQ sauce: combine ingredients in saucepan; cook over medium-high heat 3-4 minutes or until it comes to a boil. Reduce heat and simmer 3 minutes. Add to pork, mixing well.
