Pumpkin Banana Protein Blondies

I have been waiting FOREVER to buy pumpkin spiced protein powder, and I finally found it on sale at GNC so I had to pick it up! It's a seasonal item, so you may not be able to find it in stores, so I suggest looking for it online, if you want to buy.

I was so excited to start using it ASAP, so I decided to make "blondies" (aka brownies without chocolate!). These are dense, moist, and have NO FLOUR, so they can be gluten-free (check your protein powder ingredients) and are super low carb. They have a secret ingredient, but you won't be able to tell!

Ingredients

  • 1 can white beans (like Great Northern OR chick peas)
  • 1 banana
  • 2 scoops pumpkin protein powder (If you don't have this flavor, feel free to use vanilla)
  • 2 egg whites
  • ¼ cup sugar free maple syrup
  • pinches of vanilla, baking powder, and salt

Preparation

Step 1

Preheat oven to 350 degrees. Blend all ingredients well (to smoothie-like consistency. I suggest doing the wet ingredients first and then adding the dry.) Bake in a 8x8 square pan for about 40 mins, until almost cooked through. (They will continue to cook as they cool out of the oven, so you don't want to over-bake them, especially if you want them to be moist and gooey like a brownie.)
