Peppermint Chocolate Cherry Mini Muffins

These are absolutely DECADENT! Every single family member tried these and agreed.....definitely one of my best recipes yet! (and perfect for the holiday season!)

Ingredients

  • 1 cup whole wheat flour
  • 1 cup wheat bran
  • pinches of baking powder and salt
  • 3 tbsp sugar free peppermint syrup (or Splenda with 1 tsp of peppermint extract)
  • 1 cup chocolate coconut water
  • 9 chopped maraschino cherries
  • 1 peppermint chocolate bar, crushed (leave some bigger pieces too!)

Preparation

Step 1

Preheat oven to 350 degrees. Mix all ingredients, except cherries and chocolate bar. Fold in the cherries & pieces of chocolate. Bake in 24 mini muffin tins for 12-14 mins.

These muffins are LOADED with chunks of chocolate! They are best eaten warm when the chocolate is partially melting (and and they are only 50 calories each, to boot!)
