Spicy eggplant

Ingredients
- 1) One medium sized eggplant
- 2 )One medium sized onion
- 3) Two medium sized tomatoes
- 4) Small bunch of coriander leaves
- 5)2 tbsp cooking oil
- 6)1/2 cup boiled green peas
- 7)1/4 tsp asafotedia
- 8)1/4 tsp turmeric
- 9)1/2 tsp garam masala
- 10)1/2 tsp cumin seeds
- 11)1 tsp coraindee and cumin powder mixture
- 12)salt to taste
- 13)1 tsp ginger paste
- 14)4 cloves of garlic
- 15)2 green chillies

Preparation
Step 1
1) Wash and towel dry eggplant.Make small cuts on eggplant all around with a sharp knife.Push in peeled garlic cloves all around the eggplant.Brush eggplant with oil.
2) Put oven to Broil setting ( medium).Put eggplant oin oven safe tray and place it in oven.Cook till eggplant is char-grilled on all sides, turning midway with a pair of tongs (approx 5-7 minutes)
3) Remove from oven and let it cool.Before taing out from oven in the last 3 minutes add the whole tomatoes(washed) in the oven turning halfway through.Remove from oven and let it cool.
4) Now to make the masala, heat pan with some oil, once heated add cumin seeds, let it splutter, add onions.Fry onions till golden brown, add ginger paste,and mix.Add cooled roasted tomatoes, with the skin peeled off.Till the mixture is soft and mushy.Add all the dry spices - asafoetida, turmeric powder, garaam masala,coriander and cumin mix, salt. Let it cook till oil starts to leave the sides.
5) Once the eggplant has cooled to touch,peel off the charred skin, and mix the eggplant well with a fork,before adding to pan.Add the eggplant,green peas (optional), coriander leaves, salt. If needed add 1/2 cup water to mix everything well. Cook for 3-4 minutes more,mixing well in between.
7) Serve with rice or Indian flat bread.
