Homemade Chocolate Pudding

Use an electric beater to keep things smooth. Use the extra egg white to make a merenge!

Ingredients

  • 3/4 c. sugar
  • 2 T. cornstarch (or 1/4 c. flour)
  • 1/3 c. unsweetened cocoa
  • 2 2/3 c. milk
  • 4 egg yolks
  • 1 T. margarine (or peanut butter)
  • 1 1/2 t. vanilla

Preparation

Step 1

Combine sugar, cornstarch, cocoa. Stir in milk. Cook and stir over medium heat until bubbly. Cook 2 minutes more. Remove from heat. Gradually stir one cup of mixture into the 4 beaten egg yolks. Add back to pan. Bring to gentle boil. Cook and stir 2 minutes. Remove from heat.
Stir in the margarine (or peanut butter) and vanilla. Pour into container, cover and chill.
