Ingredients

  • For Custard:
  • 1/2 c. sugar
  • 5 Tbsp. flour
  • 1 pinch salt
  • 2 c. milk
  • 2 egg yolk, beaten
  • 1 tsp. vanilla extract
  • For Pastry:
  • 1/2 c. shortening
  • 1 c water
  • 1 c. flour
  • 1 pinch salt
  • 4 eggs

Preparation

Step 1

In a small saucepan, combine sugar, flour and salt. Stir in milk slowly, until smooth. Bring to a boil over med. heat, stirring constantly. Boil 1 minute, then pour a small amount of hot liquid into the egg yolk and stir.Then return egg yolk to saucepan and stir over heat until bubbly. Remove from heat, add vanilla. Cover and chill in fridge.

Step 2

In med. saucepan, combine shortening and water and bring to a boil. Sift flour, salt, and pour all at once into the mixture. Stir vigorously until mixture forms a ball. Remove from heat, add eggs, one at a time. Drop by spoonfuls onto baking sheet.

Step 3

Bake 10 minutes at 450 degrees then reduce to 400 degrees for an additional 25 mins.

Step 4

Cool completely; split, fill and replace tops.
